Indian sweets are enjoyed throughout the year and are devoured across the globe! They are often served to guests at weddings, parties and get-togethers. They are also prepared at home – because who needs an excuse to make desserts!
Some of the most well known classic Indian dessert are gulab jamun, ras malai, jalebis and carrot halwa!

As much as I love the beauty of traditional Indian desserts, it’s exciting to experiment with different flavours and design a fusion dish.
The sweets in this list have a modern twist and incorporate western flavors in some way.

Fusion Barfi Recipes

Three layers of Barfi are inspired by the delicious treat Millionaires Shortbread. Vanilla, caramel and chocolate flavoured layers combine to create a modern barfi recipe.

Baklava Barfi incorporates incredible Middle eastern flavours with soft Barfi. It is a great recipe for the festive season that works perfectly on Diwali or Eid!

This is one of my favourites from the list! The first layer is made with a white chocolate ganache and the middle layer comprises of a almonds butter barfi. The bottom layer is a digestive biscuit base.

We already know that chocolate pairs beautifully with barfi but the addition of a peanut flavoured layer takes this sweet to the stratosphere!

You’ve probably layered Nutella on toast for breakfast but have you mixed it in with barfi? This will be a guaranteed hit whenever you choose to make it!

This pistachio barfi and chocolate barfi blend is exciting and full of flavour and colour!

This soft Pumpkin Kalakand would make the perfect Halloween/Diwali crossover dessert! Kalakand can be prepared with paneer or ricotta cheese

This Indian milk cake has a double layer of rose and chocolate! It tastes like Turkish delight yet has the textures of a classical Indian kalakand.

Fusion Indian Biscuits, Pastries & Cakes

For an Indian twist for the cream cones, look no further than this rose and pistachio version. The mixture is made with yogurt and whipped cream. Rather than making the pastry from scratch, I’ve gone with a store bought puff pastry. Garnish with fragrant rose petals and pistachio dust.

Traditional Nankhatai (Indian shortbread biscuits) are given a fun twist for kids. The addition of fun fetti provides colour making these treats perfect for a celebration – maybe a birthday?

These incredible biscuits are made using Scottish shortbread recipe but with the quintessential rose and pistachio flavours!

This spongy eggless cake is prepared from Gulab Jamux mix. It is then doused in sugar syrup – best enjoyed at room temperature. It is an alternative to gulab jamun cheesecake!

This gorgeous eggless cream cake is flavoured with Indian flavours. It is topped with rasmalai to make it the perfect show stopping dessert for all kinds of celebrations.

Fusion dairy-based desserts

For an alternative to vanilla ice cream, try this Kulfi that is flavoured with chai! Two things that Indians love most!!

Bhapa Doi is a bit like an Indian cheesecake. It is made from baked yogurt. This version is topped with an orange syrup that is flavoured with Indian spices.

Traditional Kala Jamun are flavoured with peanut butter and chocolate for an irresistible version of Reese’s!

Fusion Indian drinks

This non alcoholic cardamom mojito is flavoured with cardamom syrup. It is a striking drink to serve at an Indian dinner party!

Mango Cheesecake Lassi is perfect for beginners! It is made from a delicious combination of mango, cream cheese and yogurt!

This Rose Sharbat is also flavoured with hibiscus petals. It is the ultimate summer refresher and it looks absolutely stunning in a large serving glass!

This homemade strawberry lassi is made by blending sweet strawberries to make a strawberry puree then yogurt is added. It is a welcome contrast to the plain sweet version.
Lassi is a yogurt-based drink originating from the Indian subcontinent. It is a healthy drink that is prepared daily in Indian and Pakistani households on hot summer days.
The classic Indian lassi is made with a blend of yogurt with water or milk traditionally blended with a wooden churner.
These delicious recipes includes various flavorings such as sugar, salt, fruit pulp (like mango), or spices (such as cardamom or saffron).
There are two main types of lassi:
- Sweet Lassi recipe : This version is made with yogurt, water, sugar, and sometimes fruit to create a sweet and refreshing beverage.
- Salty Lassi: In this version, yogurt is blended with water, salt, and sometimes spices like cumin to create a savory and slightly tangy drink. A thinner salt lassi version called Chaas is served in Gujarati households. It is a plain lassi served in a Gujarati Thali .
Plain sweet lassi is often served in traditional clay or metal containers called “matka” or “lassi glasses.”
Lassi can be enjoyed on its own or paired with various Indian dishes to complement the meal.
Mango lassi is probably one of the most popular lassi flavours out there, particularly in Indian restaurants around the world!
This strawberry version switches the exotic mango for vibrant strawberries to create a wonderful strawberry yogurt drink.

Strawberry Lassi Ingredients
Strawberries – juicy strawberries taste best when they are in season however, you can use frozen strawberries too. If using frozen, you may not need much water and you can skip the ice
Yogurt
For a thicker lassi, go for plain greek yogurt or greek-style yogurt.
You can also use homemade yogurt for this recipe.
Tangy yogurt can make the lassi taste a bit sour – particularly if the strawberries are quite tart too. You then end up needing more sugar
You can also use a low-fat yogurt but it may be sour so taste it first
Milk or water – for a creamier lassi, go for whole milk or even half and half. A couple of scoops strawberry ice cream gives wonderful taste and creaminess too.
I prefer to use water with a thick full-fat yogurt as the milk takes away the classical “tang” of lassi
Cardamom powder – a pinch of ground cardamom adds delicious flavour and is what sets this indian drink apart from a simple yogurt smoothie.
Sugar – I have used white sugar. Use another sweetener of your choice such as maple syrup, agave syrup, honey, or brown sugar. You can also use 100% natural sweetener, stevia, in place of sugar. Or use monk fruit
Optional:
Rose water, rose essence or rose syrup – adds a fun twist to this sweet strawberry lassi
Ice cubes

Vegan Strawberry Lassi
Replace the dairy yogurt for vegan yogurt and either use a plant based milk such as oat milk or almond milk or use water to thin it out
Plant based yogurt alternatives include coconut yogurt or oat yogurt
Pro Tips
Adjust the amount of sweetener to suit your taste buds and sweetness of the strawberries
Use fresh yogurt where possible for the best flavour
Whole milk yogurt yields best results as it is thick and creamy
You can add milk if your yogurt is too sour but otherwise water is best
Note that sweeteners other than white sugar can change the colour of the recipe

How to make Strawberry Lassi
In a blender or food processor, blend the strawberries with sugar and cardamom powder at high speed with either water or ice until smooth.

Spoon in the yogurt and either whisk or run through the blender for a few seconds. Over blending will cause the lassi to become thin
For a thinner consistency, add more ice, water or milk.
You can add the cardamom powder or any other flavouring at any stage of the method.

Serving Suggestion
Lassi is a popular drink anytime of the day. It is the perfect pick me up at breakfast with Gujarati Bateta Poha or with a meal.
Cold lassi goes wonderfully with spicy curries.
Serve in tall glasses and optionally garnish with small pieces of strawberry or other fresh berries. Mint leaves is a fancy option
Storage
If you want to freeze this lassi for later, why not pour into popsicle molds – it is a great way to cool down on a hot day and tastes just like strawberry ice cream!
Leftovers keep well in the fridge for a day.

- 1 Food processor/Blender
Ingredients
- 2 cup strawberries
- 1 cup yogurt
- ¼ cup sugar
- 1 teaspoon cardamom powder
- ice/water for consistency
- milk optional
Instructions
- In a blender or food processor, add the 2 cup strawberries , 1/4 cup sugar and 1 teaspoon cardamom powder
- Blend at high speed with either water or ice until smooth.
