My cardamom and cinnamon caramel fudge is rich, smooth, and warmly spiced – perfect for festive gifting or holiday trays. Made with condensed milk, brown sugar, and butter, it comes together quickly and sets beautifully every time.
Cinnamon is iconic in winter recipes ( eggless eggnog is a classic in our home), while cardamom adds a delicate floral warmth often found in Indian sweets . Together, they create a cosy, festive flavour that pairs beautifully with caramelised condensed milk.
Even if fudge isn’t usually your thing, this method is simple, reliable, and customisable.

Caramel Fudge with Cardamom & Cinnamon
Ingredients
- 397 gram condensed milk
- 125 gram butter
- 450 gram soft brown sugar
- 130 millilitres whole milk
- 1 teaspoon cardamom essence or cardamom powder
- pinch cinnamon powder
Instructions
- Line a tray or plate with foil.
- In a thick bottomed saucepan, heat butter, sugar, condensed milk and whole milk.
- Keep stirring and cooking the mixture continuously for around 15 minutes. Keep the heat medium low to prevent burning. Be careful as the mixture boils.
- After 15 minutes, remove from the heat but keep stirring. You will see it thicken.
- Now add cardamom essence and cinnamon powder and mix well.
- Pour the mixture into the prepared tray and smooth it out immediately.
- Leave it to set and cool for at least 2-3 hours then cut into squares.
- Store in an airtight container.

Spiced Rosemary Almonds
ingredients:
- 400g raw almonds
- 4 Tbsp. fresh chopped rosemary
- Salt to taste
- 2 tbsp. butter
- 2 tsp dark brown sugar
- Pinch freshly ground black pepper
- 1 tsp. red chilli powder or flakes
instructions:
How to cook Spiced Rosemary Almonds
- Place almonds in a pan and dry roast them for 8-10 minutes.
- In a big bowl add butter, sugar, rosemary, salt, chilli powder and black pepper powder.
- As soon as almonds are roasted add them into the bowl and quickly start mixing.
- Once they are coated evenly with the spice mixture, serve warm.
- If you want to give it as a gift, leave nuts to cool completely then pack them in a jar.
