This coconut milk latte is about to become your next coffee obsession! It is super creamy, indulgent and has a gorgeous coffee flavour.
I’ve been brewing up this Iced Coffee with Ice Cream and Starbucks Pistachio Latte non stop but wanted to try out a plant based version! I went with coconut milk as I adore coconut flavors but honestly, you could substitute in any non-dairy milk!
I make mine super quickly using instant coffee but it is just as quick using brewed coffee if that is what you prefer.
There are so many delicious ways to enjoy coconut coffee! I’ve given you the option of iced vs hot, frothy vs no froth, and different coffee types!

Coconut Milk Coffee Ingredients:
Coffee
Either use instant coffee
Or prepare an espresso using coffee beans or ground coffee – use a french press or coffee machine
Or prepare cold brew coffee
Sugar – I’ve gone with white sugar, but you can use brown sugar or coconut sugar
Coconut milk
You can use canned coconut milk, coconut cream or coconut milk from a carton. The type of coconut milk you use depends on what consistency you want. For a thicker consistency, full-fat coconut milk or coconut cream is best due to its higher fat content. You will need to thin out the coffee if using only coconut cream with water or coconut water.
If you don’t want to use coconut milk, use soy milk, oat milk or almond milk
Ice cubes – optional. To get the coffee cold and creamy, you could also use coffee ice cream
Vanilla extract goes wonderfully if you go for a hot coffee.
How to make Iced Coconut Milk Coffee
Prepare coffee of choice
Pour over chilled coconut milk and ice cubes
Drizzle over extra coconut syrup if you wish

How to make warm Coconut Latte
To make this delicious latte hot, warm the coconut milk in a saucepan or microwave before pouring over the prepared coffee.
Different ways to froth coffee
- If using instant coffee, you can froth the instant coffee granules with sugar and warm water using a handheld frother directly into your serving glass. Then, simply pour in coconut milk – either warm or chilled with extra ice. See this version in the video in the recipe card .
- If using a brewed coffee from a espresso machine, cafetiere, or moka pot, you can froth the coconut milk. Either use a milk frother or a mason jar.
- To froth the coconut milk in a jar, simply pour the milk into the jar and seal tightly shut. Shake vigorously for 1 minute. You could then microwave the coconut milk until it is hot or enjoy it cold. Pour over the espresso.
Storage
Store any leftover coffee as soon as possible in the fridge and drink up by the next day. It may separate but a quick stir should sort that.

The candy coating is basically melted chocolate with added food colouring and I like to add some spooky extras to this Halloween popcorn snack mix.

Ingredients for Halloween Party Popcorn
Popcorn
Either using popcorn kernels which require popping (the cheapest option)
Microwave popcorn is another option
White chocolate
You can use white chocolate chips or a standard bar of white chocolate broken into smaller pieces
Coconut oil
Or any other flavourless oil such as vegetable oil
Gel based food colours – I went with green, orange and black which is the perfect blend of spooky. Purple works well too to give off monster vibes. Find them in the baking aisle.
Candy eyes – I’ve gone for white and coloured googly eyes
Optional:
Halloween candy or halloween sprinkles

How to make Spooky Halloween Popcorn
Prepare your plain popcorn.
In a microwave safe bowl, add the white chocolate, coconut oil and food colours
In 20 second bursts, melt the chocolate until smooth
Immediately mix in the popcorn as the chocolate will start to cool and harden again
Once the popcorn mixture is well coated in the coloured chocolate, spread it out over baking sheet lined with parchment paper to allow to set. Try to keep gaps between the popcorn so they don’t stick together too much

Repeat for any remaining colours if you wish.
You can also use a bain marie to melt the chocolate. To melt chocolate using a bain-marie, start by placing chopped chocolate in a heatproof bowl set over a medium saucepan of simmering water. Stir the chocolate constantly until it’s completely melted and smooth, being careful not to let any water or steam come into contact with the chocolate, as it can cause it to seize.
Serving ideas
Pop a handful into cellophane bags for an individual fun treat at halloween parties or trick or treating.
Add it to a Halloween trail mix with popcorn.
You can also make these condensed milk cupcakes and decorate them in various spooky ways. You could even top the cupcakes with this Halloween Popcorn to make Popcorn cupcakes.

Pro Tips
Use a large bowl where possible as you need plenty of space to mix the popcorn with the chocolate
Optionally add in your favorite halloween candies for super spooky popcorn such as gummy worms, candy corn and other fun halloween treats. They will be easily available in candy stores.
I recommend using candy melts, gel food coloring or food colour powder rather than water based food colour. The water content can cause the chocolate to seize.
Work fast as the chocolate will thicken and harden pretty fast
Remove any unpopped kernels which can be a choking hazard for small children.
To make them vegan, use vegan white chocolate and ensure the food colours are suitable for vegans before use. NOTE THAT CANDY MELTS ARE NOT VEGAN – they contain milk powder so it is best to check the packaging first
Halloween Popcorn Balls
Halloween Popcorn Balls are a sweet treat and are an easy way serve the popcorn, especially if you’ve made a big batch.
Simply roll the coated popcorn into round balls (it’s pretty sticky)! It also works if you use a marshmallow mixture.

Storage
White chocolate popcorn is best eaten as soon as possible as the popcorn looses its crispiness. However, leftovers can be stored in an airtight container and kept at room temperature.
Yes you can. You can use orange, green and black candy melts. In the UK, candy melts are available online or in Hobbycraft.
If your melted white chocolate seems to be seizing up, quickly mix in a small spoon of milk until smooth again.

Halloween Popcorn
Equipment
- Bowl
- Spatula
- Parchment paper
Ingredients
- 6 cup popcorn popped
- 3 cup white chocolate
- 3 tube food colouring gel (15g each) Black, Green and Orange
- 3 teaspoon coconut oil
Instructions
- Prepare your plain popcorn.
- Divide your chocolate, coconut oil and popcorn into three equal portions to prepare each colour separately.
- In a microwave safe bowl, add the white chocolate, coconut oil and food colours
- In 20 second bursts, melt the chocolate until smooth
- Immediately mix in the popcorn.
- Once the popcorn mixture is well coated in the coloured chocolate, spread it out over baking sheet lined with parchment paper to allow to set. Try to keep gaps between the popcorn so they don’t stick together too much.
- Allow chocolate to set then mix all together in a large bowl with extra sweets optional to make a halloween popcorn mix.
