Absolutely yes! Instead of khoya or mawa add milk powder. Try to use full-fat milk powder if possible.
Don’t have Khoya

Follow these step by step recipe pictures, exact measurements provided in the recipe card below. First, peel or scrape dudhi and grate using a grater.
Heat ghee in a heavy-based frying pan or kadai (pic 1)
Add grated dudhi (pic 2)
Saute for a couple of minutes (pic 3)
Then add milk and cook lauki on low to medium heat (pic 4)
Cook until all the milk dries up (pic 5)
Now add sugar, keep mixing (pic 6)
Keep stirring and cooking until sugar water evaporates (pic 7)
Now add khoya or mawa and mix everything (pic 8)
Add a 2 tbsp. ghee and mix well. (pic 9)
Turn off the heat, once desire consistency achieved then add cardamom powder and nuts (pic 10)

DUDHI HALWA | LAUKI HALWA
Ingredients
- 250 g bottle gourd
- 5-6 tbsp
- 50 g mawa or khoya
- 4 tbsp ghee
- 1 tsp cardamom powder
- 2-3 tbsp chopped nuts like almonds and pistachio
- ¾ cup milk
- Heavy based frying pan or kadai
- Grater
Instructions
- Peel the dudhi and grate.
- Heat ghee in heavy bottom kadai or pan and add grated dudhi.
- Keep stirring on medium heat, then add milk.
- Lower the heat and let it cook till the milk dries up. it will take 15-20 minutes. You can see ghee will separate from the dudhi.
- Now add sugar, keep stirring till the mixture thickens.
- Add grated mawa or khoya at this stage, mix very well.
- Keep stirring, add cardamom powder and nuts.
- Once again mix well and turn off the heat.
- Serve hot or cold.

Heat ghee in a heavy-based frying pan or kadai.
Add flour and saute on low heat.
Keep stirring and roasting the flour until light brown (it will take 7-8 minutes).
Add desiccated coconut and mix, roast another 1-2 minutes.
Now add milk and cook the halwa until milk dries up, then add sugar and cook.
Once the sugar water dries up, add khoya, dates, cardamom and nutmeg powder and nuts, mix well.
Serve warm.

RAJGIRA/RAJGRO HALWA /SHEERO/SIRO
Ingredients
- 1 cup
- Rajgira flour
- ¾ cup
- Ghee
- ¼ cup Khoya or Mawa
- ½ cup
- Sugar
- 400 ml
- Milk
- 2 tbsp. optional
- Finely chopped pieces of dates and figs
- ½ tsp.
- cardamom powder
- ¼ tsp.
- Nutmeg powder Jaiphal
- 2 tbsp.
- Finely chopped almonds and pistachio nuts and coconut flakes
- 2 tbsp. desiccated Coconut
Instructions
- In a heavy bottom pan or kadhai add ghee and roast rajgira flour and saute on very low heat.
- Saute flour continuously and keep a close watch it might get burnt.
- Flour colour should get more brown, it will take between 6-7 minutes.
- Add coconut and roast the flour for 2-3 minutes more.
- Now add milk and keep stirring, so no more lumps can be formed.
- As the mixture gets drier add sugar and again keep stirring the halwa.
- Once halwa gets thicker add khoya, date and figs pieces.
- Combine well, then add cardamom and nutmeg powder.
- Mix well, switch off the heat.
- Serve in a serving bowl, garnish it with almonds, pistachio nuts and edible flower petals.
