So light and refreshing, Fresas Con Crema is the ultimate quick dessert for hot summer days. Made with just 5 simple and easy to find ingredients, you can have the easiest Mexican dessert on the table within minutes.

It requires minimal effort just like this Homemade Instant Shrikhand with Cream and Musk melon dessert .

What is Mexican Fresas Con Crema?

Fresas Con Crema or Mexican Strawberries and Cream, is a popular Mexican dessert made with fresh sliced strawberries and served with a sweetened cream sauce made with condensed milk, cream, sour cream and evaporated milk.

The end result is a delicately sweet smooth cream that is pourable but has a taste similar to ice cream. As the strawberries are mixed in with the cream, it also imbues the cream with a strawberry flavour.

Other classic Mexican desserts that we love are our Eggless Strawberry Tres Leches Cake , which is a three milk cake.

In the summer, I prepare my own version of traditional Mexican horchata. This Saffron and Cardamom Horchata is a rice-based drink flavoured with Indian saffron and cardamom.

Ingredients

Strawberries

The first step is to buy the freshest strawberries to enjoy this dessert at its best. Strawberries are highly perishable so are best bought and eaten within 24 hours.

For this recipe, I would recommend using the best strawberries when in season.

If your strawberries are too tart, sprinkle some sugar over the sliced berries. Allow to stand for 10 minutes before adding with the crema mixture.

Sweetened Cream Recipe

Double cream – use fresh double cream. Single cream is also fine but will make a slightly thinner cream mixture. Readers from the united states can use heavy whipping cream.

Evaporated Milk – we have used tinned evaporated milk. If can’t find it use whole milk or half and half.

Sweetened condensed milk

Sour cream

To make Fresas Con Crema without Sour Cream, you can use creme fraiche. Another option is to use plain greek yogurt.

Vegan Fresas Con Crema

To make Strawberries and Cream vegan friendly, we need to find some vegan substitutes for the cream.

Whisk both vegan condensed milk and vegan cream together to make the sweetened cream for this recipe.

Ensure that the white sugar you use is vegan.

Method

Slice the strawberries and place in a bowl

Add some sugar to the strawberries if they are too tart (optional)

In another medium bowl, prepare the cream base. Do not worry too much about specific amounts but do ensure the cream is sweet enough.

Add the heavy cream, sour cream, evaporated milk and sweet condensed milk. Whisk together until well incorporated but remains a pourable consistency.

In a big mixing bowl three milks are combined  - 6

Assemble in glasses, serving dishes or bowels. Add a layer of the strawberries, then top with spooning over the milk mixtures

Finish with a dollop of whipped cream if you have it.

Or mix into a large bowl and let everyone help themselves!

Serve immediately.

Storage

I would buy the strawberries only up to a day in advance

You can make the cream ahead of time and mix the strawberries and cream when ready to serve.

Do not store the strawberries and cream mixed together for long or else the cream may split.

Store the milk mixture in an airtight container and keep in the fridge for up to 5 days.

Serving suggestions

In hot summer I would have this as a breakfast or as a mid-morning snack.

Or it can be served after heavy lunch or dinner as a light, refreshing no-cook dessert.

Great for alfresco dining or garden parties.

FRESAS CON CREMA | MEXICAN STRAWBERRIES AND CREAM

Equipment

  • Mandolin or Sharp knife
  • Chopping board
  • Bowl

Ingredients

  • 500 g strawberries ripen
  • 1 tsp. sugar optional
  • 1 cup sour cream
  • ½ cup condensed milk
  • ¼ cup evaporated milk
  • ½ cup double cream heavy cream

Instructions

  • Wash the strawberries under the running water.
  • Pat dry, remove the stems from the strawberries.
  • Slice it using a mandoline or sharp knife into rounds or whatever shape you like.
  • Add sugar, mix and leave it aside for 5 minutes.
  • Meanwhile, in a large mixing bowl add all the sweetened cream ingredients and whisk together to combine.
  • Add equal amounts of berries into a glass, bowl or jar and top it up with the cream.
  • Serve immediately.

AIR FRYER SAMOSA PUFFS

These Punjabi Samosa puffs are made from a moreish flaky pastry that encases a mildly spiced potato and pea filling.

Using a shop-bought ready-made pastry has ensured that these samosa puffs are super quick and easy to make.

The filling of these puffs can so easily be adapted to suit your taste buds but I definitely recommend trying the recipe of the filling given below!

The filling, made with mashed potato, green peas and spices is delicately spiced and not too overpowering. The spice mix is a finger-licking blend of fresh green chilies and ginger, amchoor powder and special masala.

We have made these Punjabi samosas in the Airfryer rather than baking because the puffs only needed around 5-7 minutes in the air fryer before they were ready to eat.

To air fry our samosa puffs, we have used our Instant Pot Vortex 4-in-1 Air Fryer .

These air fryer banana chips with black pepper are so delicious and an easy recipe that one should not miss them.

If you have a sweet tooth, try these no guilt air fryer apple ring doughnuts , they are utterly delicious!

I’ve also baked a vegan burnt basque cheesecake in the air fryer too, and the result was phenomenal.

How to serve puff pastry samosa

Samosas go wonderfully on their own or with chutney. A chutney like Gujarati date and tamarind chutney or a green chutney would go great.

Some people like to eat their samosas with a cup of masala chai .

During the Summer months, a cooling lassi such as Caramel or Rose Lassi or Piyush Lassi would go well.

Or serve with a fresh green salad for lunch.

Serve them at your next Birthday/Diwali/Thanksgiving/Christmas get-together.

Tips

Use good quality ready-made puff pastry – I have noticed that own brand puff pastries tend not to be as good.

The puff pastry should keep cold, take it out from the fridge only when you have other ingredients are ready or just 10 minutes before you start making it.

If you’re using a frozen puff pastry, you must thaw first in the refrigerator overnight.

The filling should be very dry. Do not add a lot of oil when making the filling.

Also, it is very important that the filling should be cold before stuffing into the puff pastry, hot or warm stuffing will warm up the pastry and difficult to handle or it gets sticky.

Can I make Samosa Puffs in advance?

You can definitely make the samosa puffs in advance at different stages during this recipe.

Firstly, you can make the potato and pea filling ahead of time and keep it for a day in the fridge before using.

You can also assemble the puffs and then store either in the fridge until ready to air fry. You can also freeze the puffs at this stage.

If you freeze the puffs, the timings for air-frying will change.

I would not recommend freezing once the puffs are cooked.

Can I make puff samosa in any other shape?

Ingredients for Punjabi Samosa Puffs

Punjabi Potato and Pea Filling

Mashed Potatoes – For samosa fillings, use starchy potatoes rather than waxy in order to get a fluffy mash. We pressure cook our potatoes in our Instant Pot before peeling and mashing.

Green peas – we used frozen green peas, but you can use fresh peas too.

Oil – we used olive oil

Crushed spices : Coriander Seeds, Fennel Seeds, Whole black pepper, Cumin Seeds

Crushed fresh green chilies and ginger

Red chili powder

Turmeric powder

Garam Masala

Red chili flakes (optional)

Amchoor powder – aka raw mango powder. It is added to give a slight tartness. You can also use anardana powder or dried pomegranate powder. Alternatively, use a little lemon or lime juice

Fresh coriander leaves – finely chopped

Cashew and raisins – optional

Puff Pastry

Ready-made puff pastry sheets

Kalonji – or onion seeds to sprinkle. Onion seeds lend a really delicious smokey and nutty flavour (you may use black sesame seeds or black poppy seeds)

Milk – acts as a glaze (for a very shiny glaze use egg wash if consuming)

Alternative eggless glazes

To keep our recipes pure vegetarian, we always use eggless glazes in our bakes.

For this recipe, we have used a brushing of semi-skimmed milk. As the puffs only need air-frying for 5-7 minutes, the milk does not burn and just leaves a pleasing golden crust.

For other recipes where you do not mind a little sweetness, a brushing of light honey also leaves a shiny golden glaze on pastries.

How to Air Fry Samosa Puffs

AIR FRYER PUNJABI SAMOSA PUFFS (Puff Pastry Samosas)

Equipment

  • Air fryer/Stove
  • Chopping board
  • Knife
  • Frying pan
  • Spatula
  • Fork
  • Pizza Cutter
  • Parchment paper
  • Pastry brush

Ingredients

  • 1 packet ready roll puff pastry
  • 2 large boiled potatoes
  • 1 cup frozen green peas
  • 2 tbsp. oil
  • 1 tbsp crushed green chillies and ginger
  • 1 tbsp. black pepper fennel and cumin seeds (roasted and lightly crushed)
  • 1 tsp. red chilli powder
  • ½ tsp. turmeric powder
  • ¼ tsp. garam masala
  • ¼ tsp. amchoor powder
  • ¼ tsp. red chilli flakes
  • 2 tbsp. cashews and raisins optional
  • Freshly chopped coriander
  • 1 tsp. kalonji
  • 2 tbsp. Milk

Instructions

  • Heat oil, add cumin seeds and crushed green chillies and ginger to a non-stick pan. Add cashew and raisins at this point if using
  • Add mashed potatoes and peas and mix ensuring the spices do not burn
  • Add masalas such as red chilli powder and red chilli flakes, turmeric, garam masala, amchoor powder, salt.
  • Add the pounded masala and fresh coriander. Mix and allow to cool completely.
  • Lay the ready-made puff pastry flat on a clean surface/chopping board
  • Cut into equal squares (we have cut into 3" squares)
  • Place the cooled filling to one side of the square.
  • Fold over the pastry to make a triangle
  • Press edges together gently and score with a fork
  • Glaze with milk and sprinkle kalonji.
  • Preheat the Instant Pot Vortex Air Fryer to 180 C
  • Once prompted, add the puffs to the basket.
  • Air-fry for 5-7 minutes. Try 5 minutes for the first batch to how your puffs have cooked.
  • Remove and air fry the next batch.
