Sandwiched with aromatic mango and passion fruit buttercream, these biscuits live up their name by literally melting in your mouth, not kidding, try it, you will be smitten 🙂
The aroma of Mango and passion fruit buttercream landed me into a tropical paradise, I love these flavours. Did I mentioned that they were amazing ?!!
So, today I thought I’d feature Mango Passion fruit Melting Moments , prepared on Easter for our afternoon tea, but that would be lovely for any spring, summer entertainment or special occasions like Mother’s or Father’s day.
There’s always a good time for Melting Moments !
These scrumptious melts are perfect as edible gifts, arrange them in a decorative box or jar and tie it with decorative ribbon with a tag saying ‘ these are dangerously addictive’ 😛

Mango Passion Fruit Melting Moments
ingredients:
- 5 tbsp. Thick Mango Pulp
- 5 tbsp. Passion fruit pulp without seeds
- 500 g Salted butter
- 120 g Icing sugar
- 460 g Plain flour
- 150 g Cornflour ( Starch )
- 5 tbsp.boiled water
- For Butter Cream
- 200 g Salted Butter at room temperature
- 300 g Icing sugar, sifted
instructions:
How to cook Mango Passion Fruit Melting Moments
- Preheat the oven to gas mark 4.
- To make biscuits, cream together the butter and icing sugar with electric beaters or in a free-standing mixer until pale and fluffy.
- Sift in both flours and add 2 and a half tbsp. mango pulp and 2 and a half tbsp. passion fruit pulp.
- Also, add 5 tbsp. just boiled water.
- Beat until the mixture comes together.
- Attach a large star nozzle to a piping bag and fill the bag with the mixture.
- Pipe 60 rosettes onto lined baking sheets about 3 cm apart.
- Bake for 20-25 minutes or until pale golden.
- Remove the baking sheets from the oven and leave them to cool for 5 minutes on the baking sheets.
- Then let it cool completely on a wire rack.
- Meanwhile, make the mango and passion fruit buttercream by beating together the butter and icing sugar and remaining both pulp ( Mango and Passion fruit ) until pale and fluffy.
- Sandwich the biscuits together using a generous amount of buttercream and finish with a dusting of icing sugar.
- Enjoy!

Easy Mango Lassi with Passionfruit and Coconut
A refreshing fruity lassi is perfect to gulp down first thing in the morning for a filling breakfast, as an afternoon pick-me-up or devoured with a spoon as a light dessert.
During creation of our Mango Passion Fruit Melting Moments , the idea of making a lassi combining these flavours came to mind. Adding some coconut flavours just seemed to make sense to take the flavour of this lassi to the stratosphere!
Tangy passion fruit pairs well with sweet mango and the coconut makes the lassi so rich and creamy.
This lassi is EVERYTHING that you would want from a lassi. It is:
- dangerously drinkable – honestly one glass is NOT enough
- colourful – its gorgeous golden goodness and the passionfruit seeds make it even more intriguing
- full of flavour – the holy trinity of tropical flavour – mango, passionfruit and coconut
- easy to make – quick prep and whizz it all in a blender.

Ingredients for Tropical Mango Lassi
Mango – We need chunks of mango for this recipe. Use fresh mango where possible but you can also use frozen.
In the months of April/May until June, you can find Indian mangoes in some supermarkets and most Asian grocery stores. Indian mango have an unsurpassed taste and if you can, it is worth sourcing these although you can do without for this recipe.
You can also use tinned mango pulp if you cannot find fresh mango. This is usually sweetened so you may not need extra sugar.
Passionfruit – Mango’s best friend in this recipe. Buy fresh passion fruit and scoop out the beautiful flesh.
Coconut Yogurt – you can use either full-fat or low-fat coconut flavoured yogurt. Many coconut yogurts are now dairy-free and you can use that also. If you cannot find coconut yogurt, use plain yogurt and add coconut milk instead.
Sugar – if your mango is not sweet enough, add some white granulated sugar. Alternatively, use agave syrup, maple syrup or honey. You could also add 1 banana to sweeten.
Milk or water – add either milk (can be dairy or non-dairy) or chilled water to make the lassi less thick.
Optional – saffron

Vegan Mango Coconut Lassi
This lassi is super simple to make vegan and just requires some direct switches. The lassi will remain as delicious as the dairy one.
- Use dairy free coconut yogurt
- Use dairy free milk or add water to make the lassi thinner
How to make Mango Lassi
- Place all the ingredients in a blender, and blend until it is smooth.

Serving Suggestion
Mango Coconut and Passionfruit Lassi is wonderful on its own as a refreshing and cooling drink. However, it can also hold its own alongside a whole host of delicious food.
Whether it is a deep-fried snack such as Maru style Crispy Potato Bhajiya or 3 layer Bread Pakora , the combo of lassi and piping hot pakora can’t be beaten.
It also goes wonderfully with Paneer Tikka Masala or spicy Restaurant Style Dum Aloo .
It is the perfect drink for when:
- you have bought too many mangoes (usually me)
- you’re hosting a summer BBQ
- preparing summertime breakfasts
- you need a cooler on scorching days
- you want to serve non-alcoholic drinks at a summer pool party
Enjoy this lassi at its best straight after preparation as it will slowly begin to separate if left for a couple of hours.
Keep the lassi ice cold by adding a few re-useable ice cubes so that the lassi does not water down. You can also keep in the fridge if you are storing away for later.
If you have leftovers, freeze in popsicle moulds and enjoy Mango Coconut and Passionfruit Popsicles at a later date.

Mango, Passion Fruit Coconut Lassi (Caribbean-inspired)
Ingredients
- 500 ml low fat coconut yogurt
- 500 ml mango pieces
- 100 ml passion fruit pulp with seeds
- Pinch of saffron – optional
- 4-5 tbsp. milk or water
- 2 tbsp. Ice – optional
Instructions
- Place all the ingredients in a blender.
- Pulse to combine and process until smooth.
- Serve chilled.
