Traditional samosa chaat is prepared with chana masala and is known as Samosa Chole Chaat . It is a popular street food sold by street vendors in the Indian subcontinent.

This recipe follows short cuts to make the overall prep simpler but still you get delicious samosa chaat. The chickpeas are lightly spiced instead of making a chickpea curry from scratch.

It is one of my favorite ways to enjoy samosas alongside this Puff Pastry Samosa Tarte au Soleil .

Ingredients for Samosa Chaat

Samosas – you can use homemade samosa or store-bought samosas. Deep fried samosa work well. I used air fryer samosas that were cooked from frozen rather than deep fry.

Spiced chick peas – Instead of making a punjabi chole curry, make these quick spiced chickpeas that are full of flavour. You need red chili powder, ground cumin powder, coriander powder, garam masala, lemon juice (or mango powder)

I have used pre-cooked instant pot pressure cooker chickpeas but you can use tinned also.

Chutneys : you need a trio of tangy chutneys for chaat, they are the star of the recipe – brown chutney, green chutney and red chutney.

Sweet tamarind chutney (imli chutney), Mint Cilantro chutney , Red garlic chutney

Red onions

Nylon sev or thin sev

Fresh coriander / fresh cilantro

Pomegranate seeds

Plain yogurt – Homemade yogurt or store bought yogurt, both works fine.

Chaat masala powder – the black salt in chaat masala

Optional:

Follow this chole masala recipe if you want to prepare the traditional way

The red and green chutneys (cilantro-mint chutney) are both spicy chutneys so leave out

For spicy samosa chaat, top with chopped fresh green chilli

Tips

Use fresh ingredients where possible.

If serving for parties or get-togethers, you can prepare in advance but only assemble prior to serving

Try to use milder plain full fat yogurt as low fat sour yogurt will not taste as good.

Add a teaspoon of sugar in yogurt if your yogurt is sour.

Go easy on the red chutney if you can not tolarate spicy food.

How to make Samosa Chaat

Cook your samosas based on packet instructions or until golden brown. You may want to prepare your own fresh samosas.

Prepare the spiced chickpeas :

In a bowl, toss cooked chickpeas, oil and the spices. Heat a frying pan on medium heat and cook the chickpeas for a few minutes or until they brown slightly. Or add oil and chickpeas and spices directly in to the pan.

oil is heating in a black frying pan - 6 boiled chickpeas added into the hot oil in a pan for a quick samosa chole chaat - 7 red chilli, cumin, coriander, salt and chaat masala added to the chickpeas in a pan - 8 spiced powders mixed with boiled chickpeas in a pan - 9

Alternatively, prepare your favourite chole recipe to turn this into a chole samosa chaat recipe.

Next, you can assemble the chaat .

Break the samosa into small pieces and top with the chickpeas and yogurt. Sprinkle little chaat masala on top.

broken samosa pieces on a white plate - 10 spiced chickpeas topped on broken samosas in a plate - 11 plain yogurt poured over spiced chickpeas and samosa pieces - 12 a little chaat masala sprinkled on yogurt, chicpeas and samosas - 13

Spoon over the sweet chutney, coriander chutney and red chutney. I like to sprinkle a very tiny amount of chaat masala on every layer of chaat.

Then add generous amount of nylon sev.

Add the chopped onions, pomegranate arils and coriander leaves.

Sprinkle chaat masala and any extra garnishes that like with your chaat

Serve immediately.

three chaat chutnys, red, brown and green poured over the samosa chaat - 14 generous amount of nylon sev topped on samosa chaat - 15 pomagranate arils, onions added on the easy and quick samosa chaat - 16 fresh cilantro leaves and chatt masala sprinkled on samosa chole chaat that is in a white plate - 17 samosa chaat served with two spoons - 18

Serving

Usually Samosa Chaat is an afternoon tea time snack. You can serve it alongside a drink such as a cup of Masala Chai or Karak Chai .

I like mine with plenty of lassi such as Mango Lassi or this Rose Lassi in the summertime.

Pineapple juice is another great alternative or iced coffee with ice cream .

Storage

Store leftovers separately where possible. Keep the samosas in an airtight container and eat within 2 days.

The chutneys can be frozen, or stored in the small jars or containers and kept in the fridge for a couple of days.

Onion bhajis are an Indian appetizer made by deep-frying onion slices that are coated in a spiced batter. The batter is typically made from chickpea flour and a medley of Indian spices.

Sometimes, onion bhaji are made with plain flour although this is not the authentic recipe.

The battered onion mixture is then deep-fried until crispy and golden brown. Onion Bhaji are served as an appetizer or snack and are accompanied by onion bhaji dipping sauces.

Onion Bhajis are particularly popular in British Indian restaurants and takeaways.

They’re also known around the world as Indian Onion Fritters, Onion Bajji , Onion Pakoda, Kanda bhajiya or Pyaz ke Pakode.

Ingredients for Air Fryer Onion Bhaji

Onions – I have used white onions but you can also use red onion too or use half of both.

Gram flour – aka besan flour or chickpea flour is the main ingredient for the batter

Rice flour – a small amount of rice flour makes these onion bhajis super crispy. This is a technique I use in my Maru Bhajiya recipe (crispy potato bhajiya)

Optional – plain flour – not that plain flour air fryer onion bhaji are not gluten-free

Spices – red chilli powder, turmeric powder, ground coriander, cumin seeds and garam masala

Green chilies – optional but I do recommend you use it for an authentic taste.

Ginger-garlic paste – fresh, frozen or bottled works fine.

Bi-carbonate of soda – added just before air frying

Coriander – fresh cilantro leaves finely chopped

Oil – I like to use a cooking oil spray for ease but you can use any flavourless oil.

Optional

Chaat masala or lemon juice or amchoor powder

Air Fryer Onion Bhajis are best served as a starter alongside a basket of homemade poppadoms and dips such as these Poppadom dips .

To create a full Indian takeaway style meal, go for Paneer Jalfrezi , takeaway style pilau rice and garlic and coriander naan .

Peshwari Naan is my personal favourite!

Finish up with Mango Lassi or Masala Chai .

Storage

Air Fryer Onion Bhaji are best eaten immediately after cooking to enjoy them at their crispiest.

However, you can store the onion bhaji in an airtight container and keep in the fridge for 2 days.

To reheat onion bhaji in the air fryer – air fry for 5 minutes at 180C.

You can also place them in the oven to revive them or in the microwave.

I do not recommend freezing onion bhaji as they will loose their texture however you can do so.
